2005 T300 new hydrostatic and gear pump, drive motors, hoses, case drain and hyd. filters, flushed oil cooler, new brake valve assy., new main relief valve, charge pressure good... if you move either stick or both forward it stalls out.... and fluid seems really hot... thinking flow restriction somewhere?

You have replaced all the drive gear, there is no reason for it not work as it should.
Is the brake releasing?

yes the brakes are definitely releasing... it almost seems like it is pushing fluid faster than it can return it, if that makes any sense ?

Your turbo is junk!! Without a turbo a turbocharged engine will run and run smoothly, but it won't have any power.

Just a shot in the dark. Did you change the hydro filler cap? Had a similar experience with a t250 and the breather in the cap was plugged. The hydro would bog down and levers would feel squishy. Kind of a weird feeling overall. Easy to check, remove cap and operate machine. It would be nice if it was this easy, good luck

Yes, I have made sure the cap is venting properly.
