I ran a little low on Hyraulic fluid the other day. I put in Hydraulic Jack fluid and wow, what a difference! My plow responded unbelievably well. The response was faster, and every move of anything hydraulic functioning was way better.

You probably just thinned out the fluid. Like going from AW46 to AW32.

I believe that hydro jack fluid is aw-32, I do not know where you are but a thinner oil in cold temps. will act as you described.

Beware of inexpensive bargain hydraulic fluids.
Just get Mobil since that what's CAT puts their label on.
I just changed excavator 150 gallons and CAT dealer gave me Mobil in drums barrels.
