What might happen if a guy put in a higher pressure pump? Would the drives and pumps handle the pressure??

The pressure is limited by the relief valve in the control block. If you install a larger pump, the pressure will still be limited to the value of the relief.
The larger the pump you install, the more load you put on the engine and drive shaft to the pump
