Let it idle, release the parking brake and observe which way each side is trying to turn, Move the steering levers back and forth a few times and see if they center with the wheels for each side moving the same direction and speed. If you get different speeds or directions you likely need new parts or something is loose with the centering hardware. If the movement duplicates itself every time, then go ahead with the adjustment procedure. With this method I found it alot easier to see if I had the setting just right, as the wheels coud turn without resistance if not centered properly. Just be careful of the wheels.
